Luscious Red Pepper Curry

This is an incredibly quick and nutritious curry. Peppers and almonds
are blended here to give the sauce body, flavour and colour. The roast

squash gives it a lovely bite. Hardly any chopping, it’s a really easy

supper. The sauce also goes really well as a dressing for veg.

This is a Sri Lankan street food dish and their tasty
equivalent of fried egg and bread with lots of spice and

crunchy veg. It’s filling, nutritious and perfect for fridge

raiding and using up old bread and leftover meat if you

like. We’ve made it here with regular curry powder, but the

roasted Sri Lankan version is more authentic.

more hands-off in that you can prep the veg, get it in the oven and do
something else. It’s a toothsome combination of soft and crunchy
noodles with roasted veg (any veg, really) and a killer sauce.
